carrot raita with indian spices and dates

Raita is a classic Indian yogurt sauce that is typically served alongside spicy entrees. The primary ingredient of raita is plain yogurt; the cool, tangy flavor balances the richness and spice of Indian food. This carrot raita incorporates fresh carrots, Indian spices, fresh dates and pine nuts. You could also substitute the dates for golden raisins, and the pine nuts for cashews. 

  • Raw carrots (2 cups, shredded)

  • Plain yogurt (1 cup)

  • Salt (2 teaspoons)

  • Cayenne pepper or chili flakes (1 teaspoon)

  • Canola oil (2 tablespoons)

  • Cumin seeds (2 teaspoons)

  • Brown mustard seeds (2 teaspoons)

  • Dates (1/2 cup, chopped)

  • Pine nuts (1/3 cup)

  1. Evenly combine the shredded carrots, plain yogurt, salt, and cayenne pepper (or chili flakes) in a large mixing bowl using a spatula. Ensure the yogurt is evenly distributed throughout.

  2. In a small saucepan, heat the canola oil. Add the cumin seeds and brown mustard seeds. The spices will begin to sizzle and pop. 

  3. Add the chopped dates and pine nuts to the hot oil and spice mix. Using a wooden spoon, mix for 1 to 2 minutes over heat. Be sure that the nuts do not burn.

  4. Add the spice, date, and nut mix to the carrots. Combine with the spatula.

  5. Transfer to a serving dish and set aside until ready to serve. This dish can be stored in the refrigerator overnight and served cold or at room temperature.
