chocolate almond toffee with smoked sea salt

This simple, delicious toffee is easy to make and even more delicious to eat! It requires just a handful of ingredients and there is no baking required; just some quick stovetop cooking of the toffee until it is a deep, nutty color. It is sweet, salty, buttery, and perfect as a quick snack or easy dessert for a crowd.

  • Butter (2 cups, or 4 sticks)

  • White sugar (2 cups)

  • Sea salt (2 teaspoons total)

  • Semi-sweet chocolate chips (2 cups)

  • Sliced almonds (1/2 cup)

  1. Line a cookie sheet with wax paper and set aside.

  2. In a medium-sized saucepan, cook the butter, sugar, and 1 teaspoon of salt over low heat for about 15 minutes, until the toffee is a deep caramel color and smooth. You should stir regularly throughout the cooking process. If you have a candy thermometer, the toffee should cook to 285-300 degrees Fahrenheit so that when it cools, it hardens.

  3. Pour the toffee out onto the wax paper and spread it out in a single, even layer with a spatula.

  4. Spread out the chocolate chips over the toffee layer. In about 30 seconds, the chocolate chips will start to melt and you can use the spatula to spread out the chocolate into a second, even layer.

  5. Sprinkle the sliced almonds and remaining 1 teaspoon of salt over the toffee.

  6. Cool in the freezer for about 1 hour. The toffee will then be ready to break into pieces and serve.
