cucumber-yogurt dip (tzatziki)
Traditional tzatziki sauce is a staple in Greek cuisine; it is cool, tangy, and delicious on a variety of different dishes, including grilled chicken, lamb burgers, or simply served with pita bread. I included three different green herbs in this recipe - dill, parsley, and mint - to boost the freshness and flavor.
-
Plain Greek yogurt (3/4 cup)
-
Cucumber (1 whole cucumber; peeled, seeded and cut into tiny cubes)
-
Red onion (1 half onion, finely diced)
-
Fresh garlic (1/2 teaspoon, minced)
-
Fresh dill (1/3 cup, chopped)
-
Fresh parsley 1/3 cup, chopped)
-
Fresh mint (1/3 cup, chopped)
-
Lemon juice (2 tablespoons)
-
Salt (1 and 1/2 teaspoons)
-
Black pepper (1 teaspoon)
-
In a medium-sized mixing bowl, blend all the ingredients until evenly combined.
-
Taste and adjust seasoning as needed. Serve cold.
-
Keep in an airtight container in the refrigerator for up to a week.
