sausage and spinach strata

Strata is a delicious breakfast casserole dish that is a mix of bread cubes, cheese, cream and eggs. You can layer numerous combinations of vegetables, ground meats, and fresh herbs with the bread cubes. The entire dish can be baked up to an hour before serving and served family-style to a crowd. 

 

  • Sourgdough bread (one whole loaf, cut into one-inch cubes)

  • Olive oil (2 tablespoons)

  • Sweet Italian ground sausage (1 pound)

  • White onion (one whole medium, chopped)

  • Bell pepper (3 whole, chopped; red, orange, or yellow in color)

  • Fresh spinach (3 cups)

  • Lemon juice (2 teaspoons)

  • Parmesan cheese (2/3 cup, shredded)

  • Gruyere cheese (2/3 cup, shredded)

  • Fresh thyme (2 teaspoons)

  • Eggs (8 whole)

  • Cream (1 and 1/2 cups)

  • Milk (1 and 1/2 cups)

  • Dijon mustard (2 teaspoons)

  • Salt (2 teaspoons)

  • Black pepper (1 teaspoon)

  • Chives (2 teaspoons, chopped)

 

  1. Preheat the oven to 350 degrees.

  2. Spray a large casserole dish with non-stick cooking spray and set aside. 

  3. Place the bread cubes in a very large mixing bowl. 

  4. In a large skillet, heat 1 tablespoon of olive oil. Add the ground sausage meat and cook until brown all the way through, about 5 minutes.

  5. Remove the cooked sausage meat from the skillet using a slotted spoon and add to the bowl with the bread. Rinse out the skillet before cooking the next ingredient.

  6. Add another 1 tablespoon of olive oil to the skillet. Add the chopped white onion and bell pepper pieces. Cook for 5 to 6 minutes, until the vegetables are softened but not mushy. 

  7. Transfer the cooked onion and bell pepper to the large mixing bowl.

  8. Finally, add the fresh spinach to the same skillet. Wilt the spinach over medium heat. As the spinach cooks, it will begin to collapse in size. Add the lemon juice and stir until just cooked through. Add the spinach to the large mixing bowl.

  9. Add the shredded cheeses and fresh thyme to the mixing bowl. Blend gently with a large spatula until all the ingredients are evenly combined.

  10. In a medium-sized mixing bowl, whisk the eggs, cream, milk, mustard, salt and pepper. 

  11. Assemble the strata in the casserole dish. First, transfer the contents of the large mixing bowl to the casserole dish and smooth with the spatula. 

  12. Second, pour the egg, cream, and milk mixutre over the casserole dish, ensuring that all bread cubes are soaked.

  13. Bake uncovered for 50 minutes in the oven, until the top is golden brown.

  14. Remove and garnish with chopped chives. The strata can be served right away or allowed to cool for an hour and served at room temperature.
