watermelon and feta bites with balsamic reduction

The refreshing combination of crisp watermelon, salty feta, and tangy balsamic reduction is perfect for any season. Feta is commonly paired with watermelon, as its creamy yet dense texture stands up well to the watermelon's intense sugariness. You can also create your own variation on this recipe by adding sliced red onion, arugula, and a handful of fresh herbs (basil, mint, or parsley work well) to make a family-style salad.


  • Seedless watermelon (1 whole, cut into bite-sized cubes)

  • Feta cheese (1 large block)

  • Balsamic vinegar (1 cup)

  • Fresh mint or basil (sliced into thin ribbons for garnish, if desired)


  1. Assemble cubes of watermelon on a serving platter.

  2. Cut feta cheese block into small bite-sized cubes that can fit atop the watermelon cubes. 

  3. Place one feta piece on each piece of watermelon.

  4. Heat 1 cup of balsamic vinegar in a small saucepan over medium heat for 10 to 15 minutes, or until reduced to a syrupy consistency. Remove from heat to cool.

  5. When cool, drizzle balsamic reduction over watermelon-feta bites and top with fresh herbs. Reduction can be made ahead and drizzled just before serving.
